We normally use green beans almondine as a sidedish with beef and Bordeaux (or CA cab), but have also used e'm with roast turkey breasts. Same with the broccoli, athough have also used that with a Barbera.

I may be replying a day too late but I usually go for a Sauvignon Blanc with green vegetables. A Gruner Veltliner would also do if on hand.

If the meal were nothing but veggies, sure. But I'm assuming the green beans and/or brocolli will be side dishes to a main course of meat of some kind, and it's that dish that will drive the wine selection in my house.
