This term can be used to indicate an acid smell (often apple-like) which is introduced into a wine through the inclusion of unripe grapes in the press.

malic acid

A type of acid naturally found in most wines. It is one of the most abundant acids in unripe grapes. During malolactic fermentation, this acid is converted by yeast into carbon dioxide and lactic acid. It can also be added to wines to correct acid deficiencies.

malmsey

malolactic fermentation

The process by which malic acids are transformed into lactic acid and carbon dioxide. This results in a far less acidic wine. Malolactic fermentation is also known as "secondary fermentation."
