Blanc de blancs is a white wine made exclusively from white grapes. Technically, when applied to champagne, these are wines made primarily from Chardonnay or other white wine grapes.
Blanc de noirs are white or slightly tinted wines made exclusively from black grapes (often found in reference to Champagnes which have been made from Pinot Noir grapes).
The technique of mixing wines in order to produce a consistent style. Blending also allows the winemaker to refine the overall quality of a given wine. The term "assemblage" is a synonym for blend.
