hello, i have recently purchased a stripped out ]by banks] vineyard and winery which has 15 acres grapes incl. bk muscat, white muscat cardinal and isabella. as harvest is approaching fast fast i need to learn on fast track how to make fortified wine...partic bk muscat. i need specifics not generalities and would appreciate knowledge on where to find data.
this winery/vinyard is located in tropical australia, qld at elevation 3000 feet with sporadic temperatures down to minus 5 celcius but hot and humid summers prior to harvest. lovely climate in tropical region where coastal humidity and rain generally not evident. 100 kms from coastal plain near cairns.

You need look no further than your own backyard. There are several universities in Australia that offer winemaking courses, though since your harvest is so close it may be a bit late to go through a degree program. One school that offers distance education that may be helpful is Monash. You can check them out at www.monash.edu.au.
