Cleaning out the garden today. There are plenty of green tomatoes left. Does any one have a good recipie to put them to use (fried or anything else).

We are having T-Bone steaks for supper.

Can't help with green ones; I'd put 'em on the kitchen counter and let 'em ripen.

But with a big fat ripe tomato - cut off the top and fill with grated Parmesan cheese and bake at 350 until the cheese browns slightly at the edges. Serve it with the steak like it was a poached egg. The tomato's skin, toughened by heat, will hold it together so it can be carved with a steak knife. Dee-lish.

Okra fried together.

Just had to look didn't you Georgie.

Try this recipe and you will be an okra lover too. The kids were fighting over the last bite. And I have added it to the cookbook.
Went great with steaks, baked potatoes and Lindemans Bin 50 Shiraz.

I finaly got the recipe for Grandma's pickled okra, and have added it to the cookbook.

The kids that were fighting over the fried tomatoes and okra are actualy my 23 and 28 year old step daughters. I didn't want to give you the wrong impression. My 5-ft 9-inch, 200-lb., 13 year old son wouldn't touch the stuff. But there aren't many vegetables that he does eat, although he loves broccaly.

Sorry I missed this. I do a very traditional "fried green tomatoes" (dip in egg and then seasoned cornmeal). Immediately after cooking, I sprinkle with Parmesan. Make balsamic vinegar available to the victims.

Also, I use green tomatoes in a pasta sauce: sauté chopped red pepper and sweet onion (e.g., Vidalia) in olive oil until the onion is clear. Add chopped tomatoes, some lemon juice and your seasonings of choice. Cook until tomatoes are al dente tender. Add peeled shrimp and cover. Cook until shrimp are done. Serve over a narrow pasta and top with toasted pecans or your preferred nut. I’ll bet this would also be dandy with a sesame oil/olive oil blend and/or a layer of good rocket (arugula for our Northern friends). Since the tomatoes have more body than ripe tomatoes and don't make a real "sauce", you might want to add a very light roux just before the shrimp are done.

Georgie, Fried green tomatoes and fried okra!! It doesn't get much better than that!! Of course, there are some "lighter" ways to prepare both now, instead of deep frying but moderation is the key!! Enjoy!

And just so you know, this southern belle isn't very partial to boiled okra either but I love fried/baked okra!!

Speaking of tomatoes, does anyone have a recipe for green tomato salsa?

I've always assumed that you could use them as you would use tomatillos.

Also, gumbo ain't gumbo without okra boiled in it. In fact, the word "gumbo" is the Bantu word for okra.
