Any suggestions of (1) white wine to accompany first courses of smoked pheasant on field greens (w/sundried tomatoes and candied pecans) and shrimp and corn bisque;

(2) red wine to accompany veal roast stuffed w/brandied apricots, walnuts and spit-roasted duck lacquered w/spicy orange/coffee glaze;

(3) dessert wine to accompany molten chocolate babycakes (served warm)?

White wine--dry Gewurztraminer or Riesling
Red wine--Pinot Noir or Refosco
Dessert wine--Banyuls or Bual Madeira

I hope so. I refrain from recommending specific wines because without knowing where you are and what is available in your location, plus not knowing your budget, it is merely a crap shoot.
