Hello everyone,
I need your professional assistance in Matching wines, red and white, with Thai food;
This restaurant is opening soon in Lebanon,
I would love to have suggestions of French, Australian or USA wines.

You left out the best match with Thai food -- GERMAN Riesling at the Spatlese/Auslese level. There are only imitators, no matches.

Alsatian Riesling, Gewurztraminer, and Pinot Gris are all good matches for Thai cuisine. Trimbach, Hugel, and Zind-Humbrecht are some good producers with wide distribution that should be relatively easy to find. Good luck.

WE are strong believers in Belgian Ale as the actual solution here but a nice crisp Kerner (a white hybrid of Riesling and Vernatscht, a red grape) from Alto Adige or Austria, an Austrian Gruner Veltliner or a really cold glass of Prosecco works nice as well.

...and while you are at it, look for an Austrian or Italian Sylvaner for that Thai food.
