Every now and then a WOW wine comes along for me and this is one of them. Dark black cranberry in color. Dark cherry and chocolate on the nose. Flavors of cherry, berry, chocolate, tar, anise and spice. Complex and rich flavored with a long finish displaying a little alcohol heat, this is a delicious wine for $12.50 with a whopping 14.9% Alc/vol. Matched well with the below dish.


Ziti Baked with Shrimp & Feta Cheese - Greek Style

2 Tbsp olive oil plus enough for coating your baking dish
1 onion, sliced thin
1 Large Portebello mushroom cap
2 large cloves garlic, sliced thin
1 28oz. jar favorite tomato sauce
2 tsp minced fresh oregano, or 1 tsp dried & crumbled
1/2 tsp dried red pepper flakes
salt & freshly ground pepper to taste
2 Tbsp minced fresh basil ( or 1 tsp. dry substitute)
1 lb large shrimp, shelled & deveined (save shells for stock)
1/4 cup minced fresh parsley leaves
3/4 lb ziti, cooked & drained according to package directions
1/2 lb feta cheese, crumbled
*add several tbsp of butter or cream to enrichen if desired.

Preheat oven to 400F. In a large saucepan set over moderate heat, heat oil until hot, and add the onion and cook it, stirring occasionally for 4 minutes. Add water to the shrimp shells and simmer to extract the flavor and reduce the liquid to approx 1/2 cup shrimp stock adding to the sauce for flavor. Add the garlic and cook for 3 to 4 minutes more, or until the onion and garlic are golden in color. Now add the tomato sauce, oregano, red pepper flakes and salt and pepper to taste and simmer the sauce for 6 to 8 minutes, or until lightly thickened. Add the basil and shrimp and cook, stirring gently, for 1 to 2 minutes, or until the shrimp are just turning pink. Place cooked pasta in a large bowl, gently stir in shrimp and tomato mixture, 2 tablespoons of the parsley and half of the feta cheese. Transfer to an oiled 3 quart shallow baking dish and sprinkle with the remaining feta cheese and parsley. Cover loosely with foil, place in the oven and bake for 20 minutes, or until bubbling. Run under the broiler until golden.
