Should I have different wines for the different courses?

1)Blue sky spring greens with champagne vinaigrette and goat cheese croustade
2)Tuscany grilled chicken, fire-roasted honey mustard potato salad, roasted asparagus and zucchini matchstick salad
3)Pumpkin cheesecake

A French or New Zealand or South African Sauvignon Blanc might go with the goat cheese salad and main course (nice with green vegetables like asparagus). With the pumpkin cheesecake maybe an Alsace Gewurztraminer or a 10-year old Tawny Port.
