- MCrigger - 03-16-2005 What wine is preferred to be used with the Brown Sauce Voux with Chicken Cordon Bleu? When using Chablis, should a French, Italian Chianti or California Chablis be used? What category or perhaps vineyard of red wine would I inquire about to use in my Voux? The French have so very many. How old is your recipe? Can't see using a "real" Chablis with the Brown Sauce. Unreal Chablis from California has just about vanished from the scene. It is/was a plain generic white wine. Have not heard of an Italian Chablis. I would recommend using a red wine in your Brown Sauce Voux. There are a number of nice inexpensive ones from the South of France in the under $10 range. Ask your retailer what he/she has in this category. |
