Welcome to the 12th Annual Festival of Wine and Food at The Fairmont Banff Springs.  Our Master of Ceremony for the event this year is Anthony Dias Blue.

Anthony Dias Blue is recognized internationally as a leading food and wine expert.  Mr. Blue is a published author, columnist, TV and radio personality and his company runs numerous food and wine events and competitions throughout the world.  His award-winning work spans all forms of media and is circulated to more than 50, 000, 000 consumers each month.

Symington Family Port Tasting
In 1905, Andrew James Symington became a partner in Warre & Co. (the oldest British Port firm, established in 1670) and within a few years he was its sole owner. Since then, the Symingtons have acquired some of the most renowned Port houses and today hold the most prominent position in Vintage Port trade.
Mr. Rupert Symington, Executive Director of the 4th generation of the Symington Family Port Companies, will conduct a memorable comparison tasting between his company, W. & J. Graham's, Silva & Cosens and Dow's Port wines including Late Bottled Vintage category, Tawny 10 and 20 year old category, and Vintage Port category

Vintner's Reception

Malpighi's Traditional Balsamic Vinegar of Modena Tasting
The origin of Traditional Balsamic Vinegar of Modena goes back to the 11th Century when the chronicler, Monaco Benedettino, told of a precious vinegar given as a gift to an emperor. Five generations of Malpighi's have placed their imprint on their 12, 25 and 50 year old Balsamic Vinegar you are going to taste.  Remember its long journey from grapes on the vine to years of repose on the acetaia before coming to you.


Technical Wine Tastings
Penfolds Cabernet Sauvignon Vertical
A comparison tasting of three vintages of Bin 407 and three vintages of Bin 707. Penfolds Bin 707 Cabernet Sauvignon is the Cabernet equivalent of Grange: ripe, intensely-flavored fruit, matured in new American oak barrels, and expressing the Penfolds policy of multi-vineyard, multi-region, fruit-sourcing.  It has been packaged in laser-etched bottles since the 1997 vintage. Penfolds Bin 407 Cabernet Sauvignon sources fruit from South Australia. Inspired by Penfolds Bin 707, Bin 407 offers varietal definition and attention to detail, at a more affordable price point.  A textbook Cabernet, Bin 407 is true to Penfolds' multi-region, multi-vineyard blending policy, showing a core of ripe fruit supported by French and American Oak.


Chateau Palmer- Chateau d'Angludet
The Sichel Family have established one of the most exciting and original Bordeaux négociant companies through ongoing development since the foundation of the company in the 19th century. Being producers and winemakers, Maison Sichel has based its success on innovation and tradition. In 1938 James Sichel's grandfather joined with three other families to purchase the legendary, but then very run down, Chateau Palmer (AC Margaux).  Today, commentators and buyers in tasting notes and countless articles pay tribute to the fact that while classed as a third growth, it frequently out-performs many first growth estates. In 1961, Sichel acquired another Margaux property Chateau D'Angludet at Cantenac. Today critics agree that it ranks as one of the top Cru Bourgeois of the Médoc. James Sichel, Proprietor of Chateau d'Angludet and Co-owner of Chateau Palmer, will share with you a lifetime of inspired winemaking by the Sichel dynasty by conducting a memorable vertical tasting of  Chateau d'Angludet 1998, 1999, 2000, 2001 and Chateau Palmer 1996, 1997, 1998 and 1999.


SASSICAIA
SASSICAIA began to make an impact abroad in the early 1970's culminating in London in 1978 when it triumphed in a Decanter Magazine blind tasting of Cabernets from around the world, surprising judges who took it for a cru classé Bordeaux.  This is the moment when the world began to believe that Italy could indeed make great red wines.

SASSICAIA has been called the original Super Tuscan, but its influence has proved to be much more.  Its success ushered Italian wine into the modern era.

During the past two decades, the Marchese's energies have been devoted to this wine of his father's creation. Under his diligent and patient management, the unique tradition and respect for his father's dream has continued, and as a result, SASSICAIA consistently remains at the top level of quality on the international stage.

Marchese Nicolo Incisa Della Rochetta, Proprietor of the Tenuta San Guido Estate where SASSICAIA is produced will conduct a legendary tasting of 6 vintages (1995, 1996, 1997, 1998, 1999, 2000).

Joseph Phelps Vineyards:
Insignia and Backus Napa Cabernet
Founded in 1972, the winery and home vineyards of Joseph Phelps are located in Spring Valley near St. Helena, on a 600-acre ranch that is characterized by rolling hills, California native oaks, and 160-acres of meticulously tended vines.  Long known for his innovative spirit and passion for quality, Joseph Phelps pioneered a number of `firsts' in the early years of the winery.
The 1974 Insignia, released in the spring of 1978, was the first Bordeaux-style blend produced in California under a proprietary label.  In 1977 the first single vineyard ''Backus Vineyard'' Cabernet Sauvignon was produced, one of the first single vineyard designated wines in California.

A remarkable tasting, conducted by Tom Shelton, President and Chief Executive Officer of Joseph Phelps Vineyards, will feature four vintages of each of the Insignia (1996, 1997, 1998, and 1999) and the Backus Napa Cabernet (1996, 1997, 1998, and 1999).


M. Chapoutier Tasting
(Expressing the Earth's Diversity)
From the time of its establishment, succeeding generations have contributed to the making of one of the Rhône Valley's finest wine producing domains.  Over the years the vineyards extended, bringing new varieties of grapes into the heart of the best appellation terroirs to produce such wines as Hermitage, Crozes-Hermitage, Saint-Joseph, Côte Rhôtie, Condrieu, Châteauneuf-du-Pâpe, Banyuls, Coteaux d'Aix, Ardèche and Tricastin.

Michel Chapoutier will present all the aspects of terroir in the Northern Rhône, the backbone of the Rhône Valley.  Through his wines, he will illustrate how the natural environment and the understanding of a winemaker's role in nature, results in wines as close to perfection as possible.  Michel will take us on a guided tour of the Northern Rhône from Crozes-Hermitage, St. Joseph, Côte Rôtie and the great single vineyards of Hermitage itself. He brings to the table an incredible line-up of wines featuring 8 of some of the world's most sought after Rhône wines - M. Chapoutier Selections Parcellaires - from the classic vintages.

Premium Shiraz Vertical (A la Carte event)
Friday, October 31 at 11:00 a.m. - $175 CAD per person
A vertical tasting of two vintages of RWT, St. Henri and Grange.  All three wines are in Penfolds' Ultra Premium tier made from Shiraz grapes, but in three very distinct styles. Grange, Australia's most famous wine, displays ripe, intensely flavored and textured Shiraz grapes in combination with new American oak.  It is recognized as the most consistent of the world's great wines.  Although St. Henri has also been made since the early 1950's, it is a dramatic contrast to Grange, as it has never relied on new oak.  Stored in very old large vats, the wine is pure, unadorned Shiraz, yet has just as much longevity as Grange.  RWT, now in its third vintage, stands for ''Red Wine Trial''. Contrary to the Penfolds practice of multi-regional blending, the fruit for RWT is sourced entirely from the Barossa Valley.  The resulting wine is opulent and rich; it helps to define the Barossa Valley at the highest quality level.


The House of Courvoisier (A la Carte)
Friday, October 31 at 2:00 p.m. - $50 CAD per person
Its history intertwined with the rise of the Cognac regions, the House of Courvoisier traces its roots back hundreds of years in the production of fine spirits.  In the early nineteenth century, Emmanuel Courvoisier formed a partnership with Louis Gallois.  Together, these two respected wine and spirit merchants excelled in the production and marketing of superior spirit products.  Courvoisier enjoyed associations with many of the field marshals of the Empire, and through their influence he became connected to the Imperial Court, with the honour of supplying the Emperor Napoleon with cognac. 
In 1811, Napoleon himself visited the Courvoisier warehouse in Paris and the relationship between the House of Courvoisier and the Court was born.  In 1869, Courvoisier was named ''Purveyor by special appointment to the Court of Napoleon III''.

Blending is what separates Courvoisier from all other cognacs.  Jean Marc Olivier, the Master Blender, uses up to 100 different cognacs from numerous vineyards in the region.  Representing different ages and different crus, these cognacs come together in a marriage of finesse, body, smoothness and strength to create the supreme cognacs that carry the prestigious Courvoisier name.
The taste of Courvoisier is superior because only eau-de-vie from the four best crus is used in its production.  In addition, the master blender places so much importance on the aging process that he alone selects the 100-year-old (or older) oak trees that will be transformed into oak casks.

Master Blender Jean Marc Olivier will lead a portfolio tasting of Courvoisier Cognacs.  The tasting will bring the blender's art to life and will culminate with the ultimate expression of Cognac - L'Esprit.  The world's most prestigious cognac, L'Esprit, is a blend of over 200 years of cognacs blended by Jean Marc.  This will be the tasting of a lifetime.
