I'm a new member. I have a specific New Zeland dessert wine, "Selaks Marlborough Reilsing Ice Wine 1999," and am looking for what types of dessert would go with it (hopefully not too complex). I bought it as a b-day present to myself. I love the good german sweet wines ..mit Pradikat etc. so I thought this would be fun. should I serve it with fruit tarts, berries and whipped cream, or pears and cheese (if so what type). I really have no clue.

also I have a mild head cold, should I wait to drink this until the cold goes away, or will I not loose too much flavour with this type of wine? thanks! I'm on vacation and would love to drink it on Oct. 26. if you have time to offer some suggestions.

Pear and current tartlets. Take a decongestant early in the morning.

many thanks for the quick reply. I'll see what recipe I can dig up or find on-line. My dad's really into red wines. I'll have to turn him onto this forum!

Frankly, I think you should wait for a few years before popping this particular cork. That way your headcold won't be a problem either. Serious, I really think that a nice dessert wine like this one should be given some time. Expect some fierce acidity if you pop it anyway. In that case a dessert with citrus fruits might work.

Selaks happens to be an outstanding dessert wine producer and this is a fine product, but I agree: it might be too early to open it.

If you do go ahead, wait for the cold to go away and then take IK's tart and pear advice.

Larkwine, welcome to the board. I don`t answer to many queries pertaining to whites of any kind, but this happens to be one of the few exceptions. I have a nice stach of 83 Ice-Wines from Germany that are truly great. I have to go mit` Itmikey on given` this lil` beauty a chance. If you can find the residual sugar you can make a better decision. The higher the residual at bottling, the longer it`ll age. Mature Ice-Wines, like mature Sauternes are truly a marvelous drinking experience. winoweenie
