- quijote - 05-10-2003 Today (Sunday) I'm making a casserole consisting of a salmon fillet on top of Idaho potato slices, all baked in a vinaigrette with Mediterranean herbs. I know that Pinot Noir based wines have been recommended on this board for other salmon dishes; does the same hold true for this combo? Any other ideas? - Innkeeper - 05-11-2003 I would go with a sangiovese such as Chianti Classico or even a Rosso di Montalcino. |
