I had to post this receipe as I found it deeelish!

Grilled Swordfish with Mango Salsa
(Served with Sautéed Spinach and Grilled Potato Slices)

Grilled Swordfish with Mango Salsa
Swordfish Ingredients

4 swordfish steaks
Olive oil
Salt and pepper

Instructions

Grill 4 minutes on each side
Mango Salsa Ingredients
1 ripe mango, chopped
1/2 red onion
1/2 red pepper, diced
4 tsp. cilantro or 2 frozen Cilantro Cubes
1 lime juice
1 tsp. olive oil

Instructions

Combine and refrigerate
Sautéed Spinach
Ingredients

1 TBSP. Olive oil
2 Cloves Garlic, minced or 2 frozen Garlic Cubes
1 lb. Spinach, stems removed
2 tomatoes, diced
10 mushrooms, sliced

Instructions

Heat olive oil, add garlic, mushrooms, spinach and then tomatoes, salt and pepper.
Grilled Potato Slices
Ingredients

12 Potatoes - Yukon Gold sliced 1/4 inch thick
Rosemary Infused Olive oil

I'm not a cilantro fan so I prepared the salsa without and it was delicious.
Timing is everything in this receipe as the potatoes, fish and spinich have to come together at the same time. Prepare the salsa ahead of time so the flavors can mix. To assemble, place a portion of the cooked spinich,garlic,tomatoe and mushroom mixture in the middle of a plate. Place the finished swordfish steak on top and then spoon some mango salsa on top of the fish. Now assemble a ring of the roasted yukon gold potatoes around the fish. Your guests will think you cook for a 4-star restaurant.
