Hi AJ,

Welcome to the wine board!

If you are just popping the cork back into the bottle you will have a day or two depending on the quality of the wine.

If you are transferring the wine into a smaller vessel (empty 1/2 bottle) or you are spraying it with Wine Preserve you will get 3-4 days. I would put the wine in the fridge (even red) and take it out 1/2 hour before serving.

The whole point here, whether smaller vessel or spraying, is to reduce the amount of oxygen the wine is exposed to. Only when you are drinking it does wine like Oxygen.

Policy should be: once it's opened drink it. Because wine is a "living" beverage it starts turning to vinegar immediately. So, it will taste differently tomorrow and decidely more so the next day and so on. jw

But, I occasionally like the Chianti Classico better the second day than the first. Some wines soften a little with exposure.

Again, it depends on the quality of the wine which will generally be reflected in the price.

If you are drinking the 2-buck chucks then yes, drink it immediately!

Some folks say it takes days for some wines to "open" - even 4-5. I've always found my tastes much different than this...best during the first 48 hrs, then usually down the sink.

For whatever reason... it seems you enjoy throwing in a comment such as this and then "just walk away." For the sake of educating the newbies who don't know as much about wines as you seem to... why don't you back up your comment(s)? Post your explanation!

You also posted a similar comment under one of my prior postings, as follows:

"Buck-i-poo did you notice that Capo has granulated frum the weenerz 101 tipin' school and duplicate post fat-finger society? WW"

I had assumed that the comment must have been an "inside joke" between you and Bucko and, therefore, didn't request a clarification. I don't mean to be rude or anything akin to that but... Is this something you enjoy doing to signify superiority in your knowledge of wines? To ingratiate yourself with certain forum members? Or, just to post for the sake of posting?

Having said the above, there are many posters here who have something worthwhile and relevant to say! And, what they say is worth reading because it's informative (albeit, at times, contentious and open for hot debate.) I don't/won't need to say who I think those folks are... they already know!

IMHO, this is why we come to a forum like this... to learn AND share information on a topic that is enjoyed by all of us as a collective group...

Capo I'm sorry if you are offended by the apparent try at levity in my posts. If you go back to the very first post I made on this forum you'll find my whole intent is to make sure pomposity doesn't take a foorhold here. I poke as much fun at myself as anyone because my total belief is that drinking wine should be one of the finest pleasures we mortals can endure, and sharing this pleasure is paramount. I've probably turned more people onto wine in my 40 years of collecting and drinking than most of the critics. My comments are not meant to be hit and run, but after answering the same question a gazillion (oops another weenerism) times it does get old. With the new FAQ section maybe this will help. As far as the typin 101, I've been knowm to hit 3 keys with my lil' fat fingers with one stroke. As far as my wine knowledge is concerned, please take time to read my posts. I don't make irrellavent posts or venture into areas where I have no interest. You'll find me posting on Calif Cabs, Pinot, Zins, and other reds along with Bordeaux Reds. If you'd like to test your knowledge on these areas let me know. I noticed you posted on the size of your cellar which is considerable. Just FYI it isn't the largest by a whale of a lot with other members of the board. Please don't take this personally as I'm trying to answer your concerns in the most civilized way I know. I understand that some questions are asked over and over and over again by both newbies and others. But, if it gets to that point whereby it's a challenge/chore for you to respond... then, why bother?

As a member of other internet forums (photography and fountain pen related) I also see the same questions popping up over and over again. However, rather than responding to them... I choose to pass them by (unless I'm sure I can make a positive contribution.)

If my comment(s) were interpreted by you as a challenge to your wine knowledge... let me assure you that was not my intent. I believe I had even suggested that you seem to know your stuff. My point was that, if you had something relevant to say... then just say it. Post an explanation!

Reading some of your other postings indicated to me that you knew your stuff. But, I'm sorry to say... that knowledge wasn't reflected in the posting above. And, frankly, if I were the person asking the question and reading your comment... I'd be shrugging my shoulders and wondering, "how relevant is that comment??" And, what the h*ll are you trying to say?

Having made my comment above... I'm looking forward to learning from you about wines from Bordeaux, Californian, etc. And, yes, there will be agreement and disagreements along the way. As far as the size of my cellar goes, yes, I realize it isn't the largest... nor is it the smallest. It was brought into the prior discussion to communicate that I am not against the consumption of wines. Nothing more, nothing less! I can tell you that it isn't a case of bravado or envy.

In terms of your attempt at levity in order to mitigate pomposity... I think that's an admirable goal and I wholeheartedly support your effort! I now have a better understanding as to why you're responding the way you are. Thank you!

Considering (and understanding) the nature of internet forums (and the fact that posters can post whatever they wish without impunity), rest assured that I NEVER take any comment(s) personally. However, as I said to Bucko... that's not to suggest that I'll just take comment(s) lying down if I believe them to be inaccurate/wrong. I believe in challenging beliefs/ideas/comments and understanding the basis upon which they're made. IMHO, this is what communications is all about... and it's always good to examine and self-examine our beliefs and that of others.

I hope you now understand where I’m coming from and the reason(s) for, and behind, my postings…

No harm, No foul Capo. This forum was founded by a dedicated and very talented journaist named Jerry Mead who was a champion of free trade, and who abhorred the arrogance and pomposity that so many in the wine trade and societies want to foist on newbies instead of helping them enjoy the juice. His nickname, handsomely earned, was " The Wine Curmudgeon ". He's the only reason I post on the board. Any time I see someone trying to impress with superficial knowledge you can bet your bippy I'll jump in. Looking at life with a smile is my target. The way I write and the way I am are identical...Kinda' like twins. The reason Bucko and moi' jab each other is we're both from Okla and have completely opposite palates. Congratulations... and I hope you have a few bottles of GREAT Bordeaux tucked away for his future consumption.

I'm more of a Bordeaux/Burgundy drinker but have started drinking/tasting more Spanish wines of late. I also like BIG cabs from Napa Valley but, for whatever reason, I tend to drift back to mature Bords whenever the chance arises.

BTW, try the Remirez that I posted on in my initial posting! I think you'll enjoy it. [img]http://www.wines.com/ubb2/smile.gif[/img]

So many wines.... so little time!
