Most reds & whites are best drunk soon after opening. Some of us believe that many full-bodied reds benefit from 'breathing', or exposure to air for a bit after opening. The flavors of these wines seem to improve in the glass after the wine is poured (or decanted). There are exceptions. For example, a few red wines seem to improve after being open overnight. However, the average red will deteriorate by the second day. Most sweeter whites seem to hold up for a few days if refrigerated after opening. If you do plan to keep wine overnight after opening, then cork it & put it in the 'fridge. Better yet, pour it into a half-size bottle & leave no air space between the wine & cork. cheers, cp |
