I am a noobie, and would like to know
1.the best way to store wines, without having to build a wine cellar, we have a small home with limited space and have a small wine rack/table near an exterior door in our dining room.
2.which wines or types of wines should be served chilled, which at room temp, etc

Hi JJ, and welcome to the Wine Board. Until you can have a cellar or at least a temp.humd control unit. Plan on just buying wines to consume over the few months. You can get attractive racks to complement your furnishings that can hold a case or two or more. Do not buy any wines that require any aging. Check with your retailer when in doubt.

Your living temperature should not be confused the "room" temperature for serving red wine. If you heat your living area up to seventy five degrees, that's to much for serving any wine. So they will all have to be chilled. In the refrigerator it takes ten minutes per degree to cool down wine. In an ice bucket filled with ice AND water, you can cool wine at the rate of one degree per minute. Red wine should be served at 65 degrees F, rose' and white wines at 55 degrees F, and sparkling and dessert wines at 45 degrees F.
