- Howaboutaredwine - 08-02-2004 Hi there, I'm currently in the process of assisting the opening of a new restaurant. I'm looking for ideas of wines to go with a ahi tuna appetizer which has soy sauce, wasabi, with shredded napa cabbage. and pair a wine with a Heirloom Tomato Salad which has feta cheese,basil, balsalmic and austrian pumpkin seed oil. I know my own preferences, but I'm looking for other ideas to use in my training meeting. Thanks for the help and ideas. - Thomas - 08-02-2004 Not knowing the level of heat in the proportions for your ingredients, my suggestion is Riesling--of the semi-dry style, especially with balsamic... For the tuna, you would have to tone down the heat and maybe you can get away with Pinot Noir--but again, this is the kind of food I woulod have to taste before I could give good guess.
