I would love to learn everything there is to know about owning and making wines. The best kinds, the difference in chablis or chianti. Please help a tru novice

Hi Mia, and welcome to the Wine Board. First off I moved your first post that was on the Italian thread to the Home Winemaking thread, because even though you talked about owning a winery, I thought you will get more help there. Now about this post. You need to learn a lot about wine before you even begin to think about owning or making wines. The best way to do that is to first read about it here or on other sites, or in good books such as "Great Wine Made Simple" by Andrea Immer. Most importantly, you need to learn what good wines taste like, by tasting them. Wine shops have regular tastings, plus you have a large handful of great wineries just north of you in the Erie region. You can visit, talk, and taste. This will be more help for you than anything else I can think of.

Chablis comes from the northernmost section of Burgundy in France. The wines are made from the white grape chardonnay in a flinty, steely manner. They come in many grades. Chianti comes from Tuscany in Italy. It is made from the red sangiovese grape primarily and blended with others. It comes in just plain ole Chianti, Chianti Classico, and morphs into specialties of the region such as Rosso di Montalcino, Brunello di Montalcino, and Morellino di Scansano.
