Since I'm the only wine drinker in the house I often have late harvest wines that don't get finished. I was wondering what type of recipes you could use a late harvest with and also how long is it good in the fridge?

Hi Catherine and welcome to the Wine Board. I for one would not use them in a recipe unless they were very inexpensive. They will keep in the fridge up to a week without losing too much. Inexpensive reds ones go nice in tomato pasta sauces.

Well I don't consider them expensive. I have 2 bottles in the fridge...I think one is about $18 and the other a little less. They are both Ontario late harvest wines. I prefer icewine which I treat myself to from time to time. Just hated to waste the late harvest, they have been there for probably about 3-4 weeks now [img]http://www.wines.com/ubb2/frown.gif[/img]

Trust me, I'm no chef....but I like to play around so some off the top of my head ideas that may totally end up in failure.....but the wines are 3-4 weeks old anyways so

(1) taste them to make sure that they are still good.....not vinegar.

(2)go to www.inniskillin.com They have a recipe section and one of them has a recipe for Summer Berries with Chilled Icewine Cream (the recipe allows for a Late Harvest Riesling substitute)!

(3) what about LHR Wine Jello??
