My husband and I recently purchased two bottles of Inniskillin's 2001 Vidal Icewine. We have drank one bottle (and boy, was it good!), but we would like to save the 2nd bottle for a later date (until 2011). We know the proper way to store wine, what we don't know, is if the wine will age well. Does anyone know if Inniskillin Icewine will improve with age, or if will turn bitter? And how can you tell if a wine will age well? That's something I've never quite firgured out!

ps. If you haven't ever tried Icewine, I recommend it. You can't even imagine how good it is, until you have tried it.

Icewines are very long-lived. It will easily make 2011 with proper storage.

Bucko means 2011 (it was from the 2001 vintage.)
