Dear sir,
Thank you for your excellent guide to winemaking onyour site.
In fact I have problem in my country and I do not knowhow to solve it.
Kindly Help me to find a solution.
1-In my country it is very difficult and expensive to
get large glass containers like demijohn.
Is it possible to use a normal plastic bottles
(PET)instead.?(i.e. the 1.5 litre plastic Coca Cola Bottles.
2-It is very hard to find Campden Tablets and Pectozyme
.I purchased some tablets (cholor based for strilising
water but its name is not "Campden".
I also do not know What to use instead of Pectozyme).
3-The only Yeast I could find is the ACTIVE Yeast granols for bakery.
How much should I solve into the must?
4-What should I use instead of nutrient for Yeast?
I have got about 100 kg. of grapes (3 kinds) and put
half of them into one plastic container. So since I
have started the job Kindly help me not to get intomess!!!Thaks a lot again.

You may have some serious problems. As far as making wine, I'm not the person to help you on that.

Although my knowledge of the Islamic Faith is more advanced than most Americans, its still rudimentary. I believe its written in the Koran that the fermentation of grape is not to be consumed. Making wine in a country with a fundamentalist Islamic Government may cause you some trouble. Then again, I may be wrong.

In ancient times, Persia was a large wine producing area, exporting their grapes to the west. I think Syrah is believed to have originated from Persia.

For starters, try the following web site- http://www.joyofwine.net There is some useful information there, as well as links to other winemaking websites that may be of more help.
As far as your questions
1) Coca Cola bottles would be ok, just a little inconvenient, as they are smaller than the normal container. As long as it's a "food grade" container, you should be ok.
2) As far as the campden tablets and the yeast, I would try to purchase them on-line since buying them locally is difficult. While you are there, you should buy a book about home winemaking as well. Also, at the following web site http://www.isgnet.com/ogwa/ you may be able to get help with making wine without chemicals.
Try to avoid using baking yeast if possible. There are specific yeasts for certain types of wines.
As far as the nutrient for the yeast, I don't know. The yeasts I use don't need that. I hope this helps.
