Having baked salmon with basil butter tomorrow night (last minute decision) with baked potato and asparagas. I am thinking a cooper mountain pinot gris.

As far as other options:
a light bordeaux
regnie (beaujolais)
morgon (beaujolais)
a full chardonay
an alsace tokay pinot gris
a marechal foch

Hello! "Marechal foch", close enough to Pinot to get the job done. (I know it's from Oregon, but from whom?) Your tokay pinot gris with its probable "slightly smoky" flavor and richness should work as well. Let us know what you chose!

The marechal foch is from serendipity cellars, their "black beauty" style. The tokay pinot gris is a 1998 from Vieilles Vignes

Had it with the cooper mountain. Great fruitiness with a bit of spiciness. Finished it off with a nice cherry apple crisp for dessert. Salmon was fabulous.
