I hadn't intended to hold on to this Sauvignon Blanc from the Loire this long so decided to have it over the weekend with breaded fish and a tossed salad. Straw color with transparency.
Fortunately, this still tasted crisp, fresh and young. Like the Cotat "Les Monts Damnees" this is apparently a Sancerre that can reward some cellaring or at least not deteriorate quickly. Hint of lemon curd, plenty of acid backbone, finishes with a suggestion of lemon ice. A very enjoyable summer sipper as an aperitif or dinner wine.
