- knobby - 01-24-2008 I'm cooking: Sauteed Jumbo Prawns marinated in a chipotle mango vinaigrette on a bed of avocado topped with mango salsa Served with: Lime Cilantro Rice Bacon Wrapped Asparagus I was thinking about pairing the dinner with a Riesling (Snoqualmie 2006 Winemaker's Select Riesling)... Any other suggestions? - wineguruchgo - 01-24-2008 My mind went to Riesling also, but a dry Riesling. I think an Alsacian or any that is vinified dry would work a lot better than one that is sweet.
