- Eggs_Zach_Lee - 04-16-2004 I am planning to serve puerco pibil in a week or so with my wife and some friends. If you are unfamiliar with this dish, it is a slow roasted pork seasoned with aciote paste (annato seeds, allspice, cumin seeds, black peppercorns, habeneros), and marinated in a mixture of this paste, lemon juice, orange juice, and a liberal splash of tequila. It is served on top of banana leaves(which it is also cooked in) over rice. Does anyone have any suggestions for a wine? I was thinking about a shiraz.
