With this type of pairing, there will be some dispute. Some believe in matching a high-acid wine with an acidic, tomato-based sauce, like a Chianti. Others prefer to go the other way and choose a S. Italian variety, like Salice Salentino, Primitivo, or a Montepulciano D'Abruzzo.

Welcome to the board Beb. Go to Spec's downtown, ask for Patrick, and tell him you want some Montefalco Rosso. One bottle will serve two people (if I'm not one of them) per meal. If they're now sold out, ask for a Barbera d'Alba. Montefalco runs about $22 per at Spec's, $26 anywhere else.
