Had this Monday night with buffalo jalapeno sausage jambalaya. It was tannic, with hard edged acidic flavors, and not at all pleasant. Tuesday night with leftover sausage it was much sweeter with some garrigues flavors, the tannins and acids had mellowed, and it had developed a nice, smooth texture. For $6.99 a bottle I wasn't expecting this one to require cellaring, but I think a year or so will do it good.
