so, I'm looking for something that would pair well with root veggies braised along with beef ribs (in broth, sherry, soy sauce, honey, vinegar, ginger, and garlic).

also wondering if people think any type of cheese would work on top of this dish. swiss, jack, or feta have been suggested, but i'm not too sure...

I'd like a ribera del duero with that, or a rhone.
And in my cheese-eating days, I would think a smoked gruyere might go nicely.
I have LOTS of experience with root veggies, not so much with beef ribs [img]http://www.wines.com/ubb/smile.gif[/img]
