I am putting together a 5 course meal and need help on what wines I should match them with. So far the meal goes as so:

Appetizers: Oysters in Champagne with caramelized spring onions
Entree: Soupe de Poisson
Main: Seafood Paella
Dessert: ?
Cheese: ?

As for the last 2 courses, I do not know yet what are suitable ones to include in this menu. So if anyone could recommend any wines for the above menu and a dessert and cheese???

Hi Jojo, and welcome to the Wine Board. We are happy to help you with your research. You will need a Champagne or sparkling wine for the appetizers. Research the Champagne thread for ideas. On each thread you can go all the way back to the beginning of the Board. For the soup you will need an oak free chardonnay. Research the Australian thread for Unwooded Chardonnay and the Chardonnay thread for those wines from Macon. For the Paella you will need a light Spanish red. Research the Spanish thread for ideas. For desserts and cheeses and wines to go with them, research this thread. Good luck.
