Going to be serving salmon this weekend, probably prepared lightly spiced and grill panned. No exotic spices with anything on the meal. Was thinking of going with a 1999 Domaine Diochon Moulin-a-Vent Cuvee Vieilles Vignes. I had the 98 and here are my notes on it "dark ruby colour. Dark fruit on the nose. Soft, dark fruit on the entrance. A long, tannic finish with a long, earthy spice."

To me, this should work with salmon. On the other hand, I can also get a hold of a 1er cru burg for 10 bucks more from '98 from a producer that I trust for qpr.

Would normally be going with a pinot myself. However, if I had the choice of going with a good Cru Beaujolias in lieu of, would probably go for it.

Your friends are doing ya a favor, Pinot and Salmon are a classic match. But you won't go wrong with your Cru Booj either, either choice will work well with spiced salmon. If you have guests who prefer white wine, I think Pinot Gris works well with salmon.

To those guys with Pinot envy: the Crus Beaujolais should do just fine with the salmon.

Last night, at a seminar I hosted, we served a young Dolcetto with grilled salmon--superb pairing.

I know Pinot and Salmon are classic. I have done the combo many times, with great success. I just love high level cru beaujolais which I kinda think of as baby burgs. Tongue I'll just probably buy both and have the burg with the salmon and the beaujolais with pickled liver...my own [img]http://www.wines.com/ubb2/biggrin.gif[/img]
