Managed to get me wits about me to pop this guy open. An unfiltered tempranillo from Rioja Alta, this wine is absolutely laser beam concentrated. On the nose, dark fruit gushes at you and like a temptress leading you into a little vanilla, leather, & minerals. Realizing that its tight and will likely develop beautifully when between 4-5 years out. I'm going to let it sit and taste it over the next couple days and report back any improvements, although my taste buds are already happy.

Do report back over the days. It's not accurate, but it does give an indication of the future.

For instance, many overly manipulated wines don't make it as well into the future as their present state promises--and many under-achievers seem to soar with time in the bottle.

Day 2: The 05 Cirsion was way more approachable and certainly more balanced than yesterday. Concentration of fruit was still present, however its opened up nicely, firm tannic structure that will no doubt even out with time. Hard rock velvet candy, licorice, blackberry. I'm guessing its going to take a solid three days before this guy is really radiant.

Monday I'll probably draw a circle in my yard, lay some rock, gather charcoal or mesquite, and fire up a nice pit. This wine would pair well with heavily seasoned lamb. Perhaps wild boar or pork kabobs...
